For Moe Douban, entering the restaurant business was a no-brainer.
“We love eating!” he said on Wednesday, as construction crews continued whipping his new eatery, Kebab Fusion, into shape on South Street in Morristown.
Moe and his son Islam, a 22-year-old psychology major at St. John’s University, are hoping for a Sept. 15 opening. The restaurant is near J.C. Reiss Optician.
For the last decade, Moe said, he has operated a pair of restaurants called the Delectable Café in New York’s Battery Park section. Islam wanted to start a business, too.
Driving through Morristown, father and son noticed signs advertising available space, and investigated further.
“It’s a nice little town,” said Moe, a Bayonne resident who said he emigrated from Egypt in 1979 and later became a naturalized U.S. citizen.
“It was my dream to come to the U.S. I was young and wanted to travel,” explained Moe, who started as a cook. “It’s fun living here. I enjoy it. That’s why I’m still here.”
The fare at Kebab Fusion will be Mediterranean–Greek salads, basmati rice, pita bread, gyros, hummus, falafel and shish kebab “with a filet mignon tip on the kebab,” said Chef Mike. (The Syria native did not wish to divulge his full name.)
Entries will cost $16 or less; sandwiches will be around $5, Chef Mike said.
Ingredients will be delivered fresh daily, he promised.
“At the end of the day, whatever’s left goes in the garbage!” said the chef.
There will be sit-down service, takeout and free delivery, Moe added.
Initially, Kebab Fusion will be open seven days a week, from 11 am until 11 pm except Thursday through Saturday, when it will stay open until 2 am or 2:30 am.
Moe said he aims to please.
“I like to see people enjoying what I’m cooking,” he said.
